Maque Choux

  • 2 lbs frozen corn, thawed
  • 1 green pepper
  • 1 red pepper
  • 3 celery ribs
  • 2 medium onions
  • 3 large tomatillos
  • 1 stick (8 tbsp) butter
  • 1 can evaporated milk

Roughly chop the tomatillos, finely chop the rest of the vegetables. Melt the butter in a saucepan, then sauté the peppers, celery, onion, and tomatillos until the onions are transparent. Add the corn and evaporated milk. Season with salt, black pepper, and cayenne pepper. Cook until the corn is tender.
