Pumpkin Spice Mooncakes

Filling

  • 800 g pumpkin puree
  • 200 g jujube
  • 100 g chestnut
  • 20 g rice flour
  • 10 g Ceylon cinnamon
  • 10 g kentjur
  • 1 g allspice
  • 0.5 g clove

In your Vitamix, combine jujube, chestnut, and spices with enough boiling water for it to be blendable, then blend thoroughly. Add remaining ingredients and cook over medium to low heat until sufficiently dried.

This makes a lot of filling, you might want to scale it down.

Wrapper

  • 50 g powdered sugar
  • 50 g glutinous rice flour
  • 25 g rice flour
  • 25 g pumpkin flour
  • 160 ml water

Thoroughly combine dry ingredients, then whisk in water. Transfer to a shallow heat-proof dish, cover with a plate, and microwave on high for five minutes. Once it’s cool enough to handle, knead thoroughly to homogenize.

Neither actual batch I made was entirely successful (one was too sticky, the other too hard) so this is just a guess at a midway point, since the two combined were a usable consistency. It may need further tweaking.

Assembly

Wrap 20 g of the dough around 15 g of filling. Dust with toasted glutinous rice flour, then press with a mooncake mold.
